Fennel and Orange Salad with Smoked Salmon

Ingredients (for four persons):

2 oranges

2 fennel bulbs

4 table spoons of olive oil

Salt, pepper and lemon juice, according to taste

10 dried tomatoes, in oil

2 garlic cloves

2 table spoons of basil, coarsely chopped

300 g of smoked salmon

Preparation:

Wash the fennel, cut the stems and put the leaves aside. Cut the bulbs into four pieces and remove the hard core. Cut the fennel into thin strips and put them in a bowl.

Fillet the oranges and save the juice in a glass. Add the orange fillets to the fennel. Prepare the salad sauce by mixing the orange juice with olive oil, salt and pepper. Add the oil of the dried tomatoes.

Cut the tomatoes into very small cubes. Peel the garlic, cut it into fine slices and distribute it together with the tomatoes over the fennel and the oranges.

Distribute the fennel leaves and the basil over the salad. Finally cut the salmon into pieces and add it. Spread lemon juice over the salad, according to taste.

1 lemon
2 grapefruits
1 table spoon of brown sugar
1 tea spoon of cinnamon

Preparation:

Peel three oranges and the grapefruits cut them into slices and arrange the fruit on a plate or in a bowl. Press the fourth orange and the lemon. Add the sugar and the cinnamon and stir the juice. Pour the juice over the orange and grapefruit slices and leave the salad in the refrigerator for about 2 hours; we recommend covering the salad with a plastic film.
