Lamb’s Lettuce with Fried Pears and Walnuts

Ingredients (for four persons)

2 pears
150 g of lamb’s lettuce
100 g of walnuts
4 tablespoons of balsamic vinegar
Honey, butter to fry the pears

Zubereitung, en

Preparation:

Wash, pluck and spin the lamb’s lettuce, arrange it on 4 plates. Peel and core the pears, cut them into bite-sized pieces. Melt the butter in a pan and fry the pears together with the walnuts. Add both to the lamb’s lettuce on the plates.

Heat the balsamic vinegar in the pan, add the honey and gently stir until the mixture gets creamy. Distribute the sauce over the plates and serve the salad immediately.

Salmon and Melon Cocktaill

Ingredients for 8 servings:

800 g of water melon
600 g of salmon fillet without skin
8 springs of fresh coriander
3 spring onions
Juice of 2 limes
3 teaspoons of sugar
4 tablespoons of curry powder
Olive oil, pepper and salt to taste

Preparation:

Peel the water melon and cut it into cubes of approx. 2 cm. Cut the salmon in cubes of 1 cm and coarsely chop the coriander. Clean the spring onions and cut them into thin slices. Mix the salmon, melon, coriander and spring onions and divide the cocktail mixture between 4 – 8 cocktail glasses or bowls.

For the vinaigrette, mix the limes juice with a pinch of sugar, curry powder and olive oil; season with pepper. Pour the vinaigrette over and leave the cocktails, covered, for 10 – 15 minutes in the refrigerator. Finally, season with salt.
