Flummery with grapes

Ingredients (for four persons)
250 g of grapes
500 ml of milk
1 vanilla pod
50 g of flour
2 egg yolks
2 egg whites
2 table spoons of sugar
125 g of quark (German curd cheese)

Preparation:

Separate three table spoons of milk from the 500 ml and thicken with the flour.

Bring the rest of the milk and the vanilla pod to the boil, add the milk/flour mixture and return to the boil. Leave the flummery to cool, stirring occasionally.

Beat the 2 egg yolks and 2 table spoons of sugar in a bowl until frothy. Add little by little the quark and the flummery.

Beat the 2 egg whites until very stiff and add them to the flummery.

Wash the grapes, cut them in halves and add sugar as you wish. Arrange the flummery and the grapes in layers in a glass bowl.

Nectarine and Apricot Tart with Yoghurt

Ingredients (for a cake tin of 30 cm):
For the topping:
3 nectarines
3 apricots
A handful of pistachios
For the mass:
200 g of flour
125 g of sugar
1 egg
100 g of butter
For the filling:
2 eggs
300 g of low-fat yoghurt
20 g of vanilla sugar
2 table spoons of honey
1 tea spoons of grated lemon zest

Preparation:

Mix the ingredients for the mass and let it rest for 30 minutes, preferably in the refrigerator. 

Roll out the dough, put it into a buttered round cake tin and bake for 15 minutes at 180 degrees centigrade. 

Mix the ingredients for the filling and spread it on the tart shell. Cover the tart with slices of nectarines and apricots.

Bake for another 30 minutes.

Then decorate the tart with the pistachios.
