2 egg yolks
2 egg whites
200 gr of grapes, cut into halves and without seeds
1 teaspoons concentrated butter, (1)
1 teaspoons concentrated butter, (2)
2 tablespoons sugar
Fresh mint leaves

Preparation

Stew the grape halves in the concentrated butter (1).
Beat the egg whites until stiff, then carefully fold in the two yolks and the sugar.
Heat the concentrated butter (2) in a pan, add 1/4 of the egg mixture and allow to coagulate at low heat. Put the omelette on a plate, cover it with 1/4 of the fried grapes and fold one half of the omelette over the other.
Prepare the other omelettes in the same way, decorate with fresh mint leaves and sprinkle with sugar to taste.

4 oranges
2 red onions
2 teaspoons forest honey
4 teaspoons raspberry vinegar
4 teaspoons lime oil
2 fine pinch of ground cinnamon
very little salt and pepper
some fresh thyme leaves   
some fresh mint leaves

Preparation

Peel the oranges with the inner skin, cut them in equally thick slices and arrange on a plate.
Peel the onions and cut into very fine slices, separate the individual rings and cover the orange slices with them.
Then drizzle the honey, vinegar and oil over the oranges and carefully season with the remaining spices. Use the thyme and mint leaves as decoration.
