Salmon Tapas with Grapefruit and Avocado

Ingredients (for 12 pieces):
1 pink grapefruit
1 ripe avocado
6 slices of wild salmon or smoked salmon
1 package of cream cheese
some branches of coriander
some pink peppercorn.

Preparation:

Peal and fillet the grapefruit. Cut the salmon into square pieces of 3 - 4 cm. Peal the avocado and cut it into thin slices.
Distribute one half of the salmon pieces on several plates and spread with cream cheese. Add a slice of avocado, then another layer of cream cheese, a piece of grapefruit, some coriander leaves, and finish with a piece of salmon.
The coriander and the grapefruit pieces also serve as decoration, for example on a toothpick. Sprinkle with (ground) pepper.

Ingredients (for four persons)

2 grapefruits (pink)
4 table spoons honey
60 g butter
4 table spoons Noilly Prat
2 tea spoons cinnamon
2 pinches of pepper

Preparation

Cut the grapefruits in two halves and cut the pulp along the membranes, beginning from the middle of the fruit. We recommend to remove all the seeds.

Mix the honey with the butter, Noilly Prat, cinnamon, and pepper. Put the grapefruit halves in an ovenproof dish and distribute the seasoning mixture over the fruit. Allow to brown well under the grill (preheated at 150° C / 300° F).
